La Pavoni’s first coffee machine was vertical. It had a boiler at fixed temperature unlike the modern boilers. The heat source of these boilers was either gas-rings or electricity. It had certain brewing groups and a filter also for ground coffee.

This model existed in pre war period that sometimes made coffee with a sour or burnt taste. It happened because sometimes steam went through the coffee with water. Post-war a changed system with a horizontal boiler was launched by La Pavoni. In this system water passed from the boiler with the pressure of gases. It was then filtered through and mixed with the coffee. With the help of this mechanism, the risk of the burnt taste of coffee was over.

In 1974 a new machine was launched in which 16 types of coffee could be made successively. This modal had a manometer which indicated the pressure of the boiler.

After few years company decided to study new ideas for increasing the production of machines, as the demand of its machines was growing day by day.

Today the latest machine of La Pavoni is the machine which is able to make espresso and cappuccino coffee in seconds. No manual effort is required at all. This machine can also make big amount of coffee at a single point of time. These machines are basically used for commercial purposes, where customer doesn’t have time to wait for his turn.
